Sublime Restaurant and Bar in Fort Lauderdale is a conceptual vegetarian restuarant and bar. Owner Nanci Alexander proves through every peaceful moment that the transporting waterfalls create, every set of eyes that open wide at the sight of a stunningly-decorated entree and every carnivorous palate that's satisfied by the all-vegetarian and all-organic menu that it's possible to create a high-concept restaurant that does more than turn a profit. While Sublime demonstrates that it's possible for everyone to a enjoy a well-prepared meatless meal -- converting the public to conscious dining -- it raises money for Alexander's own organization for improving animal welfare, Animal Rights Foundation of Florida. In fact, 100% of the restaurants proceeds go toward this cause. Sublime's concept is certainly unique, but what about the food? The Sublime Loaf is meatless, but hearty comfort food with its lentils, brown rice, water chestnut, couscous and grilled asparagus. With tofu, slow-roasted tomatoes, garlic confit and herbs, the Spinach and Eggplant Raviolis chellenges meatier Italian dishes. Things really get serious at Sublime when the main course is cleared from the table. That's when the likes of Chocolate Nirvana arrives to transport you with its Kahlua butter creme and dark chocolate ganache.
